KitchenAid® Artisan® Series Tilt-Head Stand Mixer: Selecting the Right Speed
The right speed selection depends on what you’re creating and which attachment you’re using for you Artisan® Series tilt-head stand mixer. The flat beater is ideal for normal to heavy mixtures, and the dough hook is perfect for mixing and kneading yeast doughs. Use the wire whip for airy mixtures, but be careful not to over-mix.

SELECTING THE RIGHT TOOL AND SPEED
Once your stand mixer is assembled, you can begin making. First, select the right tool. Use the flat beater for normal to heavy mixtures. Use the dough hook for mixing and kneading yeast doughs. Always use the dough hook at speed 2 for yeast doughs. Use the wirewhip for creating airy mixtures. With cake mixes, use speed 4 for “medium” and speed 6 for “high.” Avoid over-mixing. Check your use and care guide for specific speeds and mixing times. For even more versatility, use the power hub and your optional attachment. Remove the power hub cover. Insert and secure the attachment into the power hub. Refer to attachment use and care guide for specific usage instructions.
