How To Make Belgian Waffles

  • Flour

  • Baking powder

  • Sugar

  • Salt 

  • Milk

  • Vanilla extract

  • Eggs, separated

  • Butter, melted or vegetable oil

  • Toppings such as syrup, fresh berries, sliced fruit, yogurt, whipped cream, powdered sugar

Step 1: Prepare waffle maker

Turn on your waffle maker to preheat it.

Step 2: Prepare stand mixer for whipping egg whites

Affix your stand mixer with the wire whip. Secure your mixing bowl. Make sure your mixing bowl and wire whip are clean. Any residue from previous use, especially fats like oil or butter, will interfere with the process.

Step 3: Whip egg whites

Place your egg whites along with a pinch of the salt (optional) in your mixing bowl. Whip ingredients on medium speed for 30 to 60 seconds or until frothy. Increase the stand mixer speed to high and whip until egg whites form stiff peaks. Set aside to incorporate into the ingredients later. You can either transfer your egg whites to another bowl, or use multiple stand mixer bowls to avoid deflating your whipped egg whites and cleaning your bowl between uses.

Step 4: Prepare stand mixer to incorporate dry ingredients

Step 5: Sift and mix dry ingredients

Add the flour, baking powder, sugar and salt to the sifter attachment. Turn on your mixer to a medium-low speed and start the sifter.

Step 6: Add wet ingredients

Gradually add the milk, vanilla, egg yolks and melted butter or vegetable oil and mix until smooth.

Step 7: Fold whipped egg whites

Turn your stand mixer on the lowest speed to gently fold the whipped egg whites into the mixing bowl. Watch the mixture closely to avoid over mixing or it may deflate the ingredients.

Step 8: Bake in waffle maker

Grease your waffle maker with oil or a non-stick spray. Pour a portion of Belgian waffle batter into your waffle maker and cook for 5 minutes or until golden brown. Check your waffle maker owner's manual for specific instructions.

Is Belgian waffle batter the same as pancake mix?

While both recipes have similar ingredients, the amounts differ. Belgian waffle batter requires more sugar, butter and eggs which lends to the golden brown color, the light, fluffy interior and crisp exterior. More milk in pancake batter results in a more cake-like texture.
